Ingredients1 can chickpeas, drained and rinsed1 cup sweet corn1 red bell pepper, diced1/4 red onion, finely chopped1/4 cup fresh parsley, chopped2 green onions, sliced2 to 3 tbsp lemon juice2 tbsp olive oilSalt, to tasteBlack pepper, to tasteOptionalChopped cucumberJalapeño or chili flakesAvocadoInstructionsIn a bowl, combine chickpeas, corn, red bell pepper, red onion, parsley, and green onions.In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.Pour the dressing over the salad and toss well.Chill for 15 to 30 minutes before serving for best flavor.
